  • 1 cup Mixed Nuts (pecans, cashews, pistachios, etc.)

Sweetness & Stickiness:

  • ⅔ cup Cranberries (dried or fresh)
  • 2 medium Bananas (or 1 cup Medjool Dates)

Binding Power:

  • 2 tbsp Almond Butter (or Coconut Oil)
  • 2 tbsp Flax Meal
  • 1 tsp Vanilla Extract

Matcha Magic:

  • 2½ tsp Culinary Matcha Powder (high quality recommended)

Instructions:

  1. Preheat & Prep: Set your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Toast the Base: Spread the oats, seeds, and nuts on the prepared sheet and roast for 10 minutes on the top shelf.
  3. Mix & Match: Transfer the roasted mixture to a bowl and stir in the cranberries. Set aside.
  4. Blend the Magic: Combine bananas (or dates), almond butter (or coconut oil), flax meal, vanilla extract, and matcha powder in a blender until smooth and creamy.
  5. Combine & Press: Pour the wet mixture over the dry ingredients and mix well to combine. Transfer the mixture to the prepared baking sheet and press down firmly to compact it.
  6. Bake to Perfection: Pop your bars in the oven for 30 minutes, or until golden brown on top.
  7. Cool & Slice: Let the bars cool completely before slicing them into squares or bars of your desired size.
  8. Matcha Dust (Optional): For an extra visual and flavor boost, dust your bars with a sprinkle of matcha powder before serving.

Tips & Tricks:

  • Substitute other dried fruits for cranberries based on your preference.
  • Use nut butter alternatives like peanut butter or sunflower seed butter for a different flavor profile.
  • Add a pinch of cinnamon or ginger to the dry ingredients for a warm spice kick.
  • Store bars in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
