Dairy-free Fruity Baked Donuts

 

I had a lot of surplus fruit in my pantry so I used them to make these adorable baked doughnuts that are dairy & gluten-free! The dark chocolate glaze really works well with the fruitiness of the donuts and believe me they were fruity.

Ingredients (5)

DONUTS

  • 1 cup flaxmeal
  • 2 apples; sliced
  • 2 bananas; sliced
  • 2 oranges; sliced
  • 2 eggs

DECORATION

  • 1 cup dark chocolate melts
  • 1 T coconut oil
  • 1 cup of healthy toppings of choice (I used goji berries, cranberries, peanuts, cacao nibs, granola, and coconut flakes)

Method

DONUTS

1. Preheat your oven to 180C/350F and grease your donut tray.

2. Blend all the donut ingredients until a smooth batter forms.

3. Evenly scoop your batter into the moulds. Bake for 30 min or until it passes the toothpick test.
TIP: You can pour your batter into a piping bag and pipe its contents into the donut moulds to easily get perfect donuts.

4. Set aside on a wire rack to cool down completely.

DECORATION

1. Melt the dark chocolate melts and coconut oil in a double boiler. Then take off the heat.

2. Dunk one donut face down into the melted chocolate and then transfer to wire rack.

3. While the chocolate is melted, sprinkle your topping of choice. Repeat this process until all donuts are used up.

4. Store in a cool place to let the glaze solidify.
