No-churn Gingerbread Ice Cream


Another awesome mix of winter flavours made of summer a Christmas. Mildly spiced with ginger and with the added surprise texture of cookies throughout your ice cream, this is one easy recipe to try out!

Ingredients (8)

BASE ICE CREAM

  • 450 g Thick cream
  • 260 g Sweetened condensed milk

FLAVOURING

  • 1 tsp Ground ginger
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1/4 tsp Ground cloves
  • 2 T (80 g) Molasses
  • 120 g Gingerbread cookies

Method:

  1. Crumble the gingerbread cookies into small chunks.
  2. Whip the cream until stiff peaks form.
  3. Fold in condensed milk and all flavouring ingredients.
  4. Transfer to a pan (9x5 works well) and sprinkle with more crushed cookies.
  5. Freeze for 4 hours minimum.
  6. To serve, let it sit at room temperature for 5 minutes before scooping.
