Another awesome mix of winter flavours made of summer a Christmas. Mildly spiced with ginger and with the added surprise texture of cookies throughout your ice cream, this is one easy recipe to try out!

Ingredients (8)
BASE ICE CREAM
- 450 g Thick cream
- 260 g Sweetened condensed milk
FLAVOURING
- 1 tsp Ground ginger
- 1 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1/4 tsp Ground cloves
- 2 T (80 g) Molasses
- 120 g Gingerbread cookies
Method:
- Crumble the gingerbread cookies into small chunks.
- Whip the cream until stiff peaks form.
- Fold in condensed milk and all flavouring ingredients.
- Transfer to a pan (9x5 works well) and sprinkle with more crushed cookies.
- Freeze for 4 hours minimum.
- To serve, let it sit at room temperature for 5 minutes before scooping.
