This was a hit at my family Christmas dinner and my personal favourite of the 3 flavours I made. It blends sweetness with a slight bitterness from the pudding and also adds a subtle kick with the spices.

Ingredients (6)
BASE ICE CREAM
- 450g Thick cream
- 260g Sweetened condensed milk
FLAVOURING
- 1 T Orange zest
- 40 g Dark brown sugar
- 230 g Christmas pudding
- 50ml (42 g) Brandy
Method:
- Crumble the Christmas pudding.
- Whip the cream until stiff peaks form.
- Fold in condensed milk and all flavouring ingredients.
- Transfer to a pan (9x5 works well) and sprinkle with more crushed Christmas pudding.
- Freeze for 4 hours minimum.
- To serve, let it sit at room temperature for 5 minutes before scooping.
