No-churn Christmas Pudding Ice Cream


This was a hit at my family Christmas dinner and my personal favourite of the 3 flavours I made. It blends sweetness with a slight bitterness from the pudding and also adds a subtle kick with the spices.

Ingredients (6)

BASE ICE CREAM

  • 450g Thick cream
  • 260g Sweetened condensed milk

FLAVOURING

  • 1 T Orange zest
  • 40 g Dark brown sugar
  • 230 g Christmas pudding
  • 50ml (42 g) Brandy

Method:

  1. Crumble the Christmas pudding.
  2. Whip the cream until stiff peaks form.
  3. Fold in condensed milk and all flavouring ingredients.
  4. Transfer to a pan (9x5 works well) and sprinkle with more crushed Christmas pudding.
  5. Freeze for 4 hours minimum.
  6. To serve, let it sit at room temperature for 5 minutes before scooping.
