Dairy-Free Gingerbread Cookies

 

These are easy, delicious, and they smell great too! I made a double batch, one using butter and the other dairy-free and they tasted almost identical.

Ingredients (10)

WET

⋅ 80g softened unsalted butter (or 40g coconut oil + 40g almond butter)

⋅ 50g (1 large) egg

⋅ 120g (3 T) molasses

⋅ 87g dark brown sugar

DRY

⋅ 200g flour

⋅ 1/4 tsp salt

⋅ 1/2tsp ginger ground

⋅ 1/2 tsp cinnamon

⋅ 1/4 tsp nutmeg (optional)

⋅ 1/2 tsp baking soda

Method:

1. Mix all dry ingredients

2. Whisk together all wet ingredients

3. Combine dry and wet mixtures

4. You now have your dough. You can use this as you please, make regular-shaped cookies or use cookie cutters to make shapes and enjoy this delicious recipe 😁
