Ingredients (9)
• 1 cup of rolled oats
• 1 cup of mixed seeds (I used chia and sesame seeds)
• 1 cup of mixed nuts (I used pecans, cashews and pistachios)
• ⅔ cup of cranberries
• 2 medium bananas (or 1 cup medjool dates)
• 2 T of almond butter (or coconut oil)
• 2 T of flax meal
• 1 tsp of real vanilla extract
• 2½ tsp culinary grade matcha (I use Zen Wonders' Superior Culinary Taishiro)
Method:
1. In a food processor, blend the oats, seeds and nuts just until they are chopped into small pieces.
2. Place the blended mix in a large bowl and stir in the cranberries. Set aside.
3. Then blend the bananas, coconut oil, flax meal, vanilla extract and matcha until smooth.
Combine both mixtures until well incorporated.
Use a spoon to scoop some of the mixture and roll them between your hands into balls. Repeat until all of the mixture is used up.
Dust with more matcha. (optional)
Chill in the fridge for at least 1 hour to allow them to firm.
