Matcha Japanese Souffle Pancakes

 




The Japanese are no strangers to the notion of dessert for breakfast, and the thick soufflé pancake is a perfect example of that. This pancake is much more sweet and fluffy compared to traditional pancakes. It gets its lightness and sweetness from the meringue that gets folded into the batter (hence the name soufflé pancake).

Culinary grade matcha has a rather bitter sweet aroma which goes perfectly with the sweetness in these pancakes. If you like a sweet start to your day, this is perfect for you!

INGREDIENTS (9*)

BATTER - DRY
• 1 cup cake flour
• 1/2 tsp baking powder
• 2 Tbsp Matcha

BATTER - WET
• 2 egg yolks
• 1/4 cup sugar
• 3/4 cup Butter milk (yoghurt)
• 1 tbsp Kewpie mayo (butter)

MERINGUE
• 2 egg whites
• 30 g icing sugar

TOPPING IDEAS (optional)
• Ice-cream
• Seasonal fruits & berries
• Coconut shreds
• Granola (or bircher muesli)
• Maple Syrup (or honey)
• Pistachios (or nuts of choice)
• Icing sugar (or matcha powder)

EQUIPMENT
• Ring molds approx. 6cm in diameter, 3cm tall (you can easily make your own with cardboard rings wrapped in parchment paper).
• Oven-safe skillet with lid.
• Cooking spray; for cooking (or butter/coconut oil).

METHOD

BATTER
1. Preheat oven to 180C.

2. Sift all the dry ingredients together in a bowl and combine.

3. In another bowl mix mayo with sugar. Mix in egg yolks. Then add butter milk and mix to combine. Make a well in the centre of the dry ingredients and pour the liquid mixture in.

MERINGUE
4. Whip eggs from slow to high, until foamy & soft peaks. Add in in sugar little by little while whipping until stiff peaks form. 

5. Add meringue to the batter, half at a time, folding lightly. Don’t over-mix!

PANCAKES
6. Grease skillet & ring molds. Fill up the ring molds until they are 3/4 full.

7. Bake for 5 minutes with lid on, and then 1 minute with lid off.

8. Carefully flip the ring molds and repeat; bake for 5 minutes with lid on, and then 1 minute with lid off.
NOTE: wear heat proof gloves to flip the molds more easily.

9. Plate up the thick pancakes with toppings and serve.
