Want a light and healthy breakfast that tastes great and fills you up? These muffins are a moist, sweet and an easy solution to that problem.
I initially started to make these as a way of including more oats into my diet to increase my fibre intake, as well as using up ripe bananas which are a common staple in my pantry. And I’ve got to admit that I was very happy with the results! As i mentioned above, these are super moist and delicious! I am also really happy that I can make these more often as I love muffins but I generally never eat them since they usually aren’t that good for you.
I ate these every morning for a week and eating these muffins was the part of my day that I looked forward to the most 😂

Serves: 14 muffins
INGREDIENTS (9*)
DRY
• 2 ½ cup oat bran
• 2 tsp baking powder
• 1 tsp cinnamon
WET
• 3 ripe bananas; mashed
• ½ cup raw honey
• ½ cup greek yogurt
• 2 eggs
• 2 tsp vanilla extract
FILLING (optional)
• 1 cup choc chips
TOPPINGS (optional)
• honey, crushed nuts, icing sugar
METHOD
1. Preheat oven to 180C. Grease a muffin tray with cooking spray or coconut oil.
2. In a mixing bowl, mix all dry ingredients together.
3. Add in wet ingredients and mix well.
4. Let batter sit for 10 minutes for oats to soak.
5. Fold in choc chips. Pour batter into the muffin tray molds.
6. Bake for 15 minutes, ready when a toothpick inserted into center comes out clean.
7. Top with nuts, honey and allow to cool.
8. Dust with icing sugar and serve.
