Ingredients:

Caramelized Onions:

  • 3 Red or Brown Onions (sliced into rings)
  • 1 Knob of Butter
  • 2 Tbsp Olive Oil
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Balsamic Vinegar (optional)

Patties:

  • 680g Ground Beef (80/20 lean)
  • American Mustard
  • Salt & Pepper

Burger Fillings:

  • 6 American Cheese Slices
  • 12 Bacon Strips
  • 3 Pickles (sliced)
  • Iceberg Lettuce

Instructions:

Prep Work:

  1. Preheat & Hold: Heat your oven to 70°C (158°F) to keep cooked ingredients warm.
  2. Onion Magic: Slice your onions into rings and cook them in a skillet with butter and oil until softened (around 15 minutes). Add brown sugar for a touch of caramelization (5-10 minutes). Set aside in the oven.
  3. Bacon Bliss: Cook your bacon strips in a cold pan until crispy, then transfer them to the oven.
  4. Patty Time: Divide the ground beef into 6 patties, shaping them wider and flatter than desired (they'll shrink during cooking). Make a dimple in the center to prevent them from puffing up. Keep them chilled in the fridge.

Burger Magic:

  1. Season & Sear: Season one patty at a time with salt and pepper just before cooking. Sear on a hot skillet (no oil needed) for 3-5 minutes per side.
